Tacos/Taco Bowls (my five year old finds the shell hard to eat)- http://whatsgabycooking.com/di.....bowl/ I replace the chicken with a mix of cooked veggies. I use peppers, mushrooms, sweet potato, corn whatever I want to use up
I love soups. I make chili with beans, veg, cheese etc. I make veggie soups chunky and blended, minestrone. I use the crockpot.
No fry eggplant parm
Do you and your kids go for more interesting flavors? I can give you more ideas. Chinese, indian, mexican.

No fry eggplant parm - very easy - just layer corn flake crumbs, raw eggplant, sauce and cheese in pan. cover bake. Uncover, add sauce and bake some more.
Home made pizza
Lasagna - I use fat free cottage cheese to cut down on the fat and no boil noodles to make it fast
Falafel and pita - buy falafel and pita (can also buy baked falafel balls), make home made techina or buy and cutup a salad
No boil Mac and Cheese - there are 2 versions on imamother, one with sauce and one without.

For homemade falafel this recipe is very easy http://allrecipes.com/recipe/2.....auce/
It uses canned chickpeas. I have both fried and baked. I serve them over salad with lettuce, tomato, cukes, with techina as a dressing.

- cauliflower and cheese--same as mac and cheese, except substitute boiled cauliflower florettes (broken into smaller pieces) instead of pasta, or use mix of pasta/cauliflower.
- frittatta/edja--open faced omelettes, you can try different flavours, ranging from grated courgettes (sautee first so it's not too liquidy), spinach, kale, sweet peppers, sweetcorn, mushrooms, sauteed onions, mashed potato (leftovers work perfect), cheese
-chakchouka--ideally made with (over) ripe tomatoes but tinned chopped tomato without most of liquid would do. Make the base sauce by first sauteeing onions, peppers, sliced garlics till they're soft, add a tin or a carton of chopped tomato (use only 1/2 of liquid), add S&P, paprika, cumin, hot pepper to taste and cook till thickened. Drop cracked eggs sunny-side style, cook till desired doneness.
-vegetarian cottage pie--sautee finely chopped mixed veggies (onion, celery, carrots, courgettes, peppers) in a large skillet with a bit of oil, s&p, add 1lb vegetarian mince (we use Quorn), 1/2 tin tomato sauce, onion soup mix or 2tbsp soy sauce, a bit of dry red wine if you want. Cook for 8-10min till the mixture resembles drier version of sloppy Joe/chili. You can of course serve as sloppy Joe over jacket potatoes or as is, but for cottage pie, fill half of oven-proof casserole and top with mashed potatoes and sprinkle grated cheese. Broil briefly/bake at 200C oven till the top browns. yields enough for 6-8 (The mix can be frozen so this is suitable for batch-cooking).

The burrito bowls look great, can you just explain what you do with the veggies? You use the oil and spices on the veggies you mentioned and grill them?
Also what do you use for the charred corn and what is pico de gallo?
