I got this from an Ami Magazine a few years ago. I make it all the time -- it's one of the few ways my kids are willing to eat any sort of beans (this soup and chulent, basically )
Minestrone Soup
5 Tbsp. olive oil
2 onions, chopped
2 stalks celery, sliced
3 carrots, sliced
6 cloves garlic, minced (I use the frozen cubes)
8 cups chicken stock (or water with soup mix, or plain water in a pinch)
1 large can diced tomatoes with liquid
1 can cannellini beans (or any small white beans)
1 can chickpeas (garbanzo beans)
1 Tbsp. tomato paste
1 cup shredded cabbage
1 potato, cubed
1 tsp. basil (or 2 Tbsp. fresh basil, chopped)
1/2 tsp. oregano (or 1 Tbsp. fresh oregano, chopped)
1/4 tsp. sage powder (optional)
Salt and Pepper to taste
1 cup uncooked small sea shell pasta
In a large pot saute onions in the oil until translucent. Add celery, carrots, and garlic and saute for 2-3 more minutes. Add the liquid, and all the rest of the ingredients except for the pasta. Cover and simmer for 1 hour. Add the pasta and cook covered for another 30 minutes.
Variation: Add 2 cups fresh baby spinach when put in the pasta. (I've done it with frozen Bodek spinach and it's been fine)
Note: This soup thickens when refrigerated, you may have to add additional liquid if you reheat it.

I make one very similar to M in Israel but I add spinach, green beans, zuchini. Whatever veg I want to use before it spoils.

One glass jar of Barilla tomato sauce, any kind, perhaps Marinara
Leftover pasta
Leftover rice
Leftover stray potatoes
Any ends of meat leftovers
Frozen vegetables: green beans, maybe corn, mixed vegs, anything
Can of beans, rinsed, any kind. Perhaps red kidney beans.
Can of chick peas (garbanzos), rinsed, if you feel like it
1 tablespoon of bland oil
A shake or two of garlic powder
Maaaaybe a little onion powder
Heat all that slowly in a large covered pot until it boils, then simmer a bit to clean it well. Stir only once briefly.
It may need black pepper. See what you think after it's hot.
In short, it's a leftover soup, with vegetables, pasta, and beans, in a tomato base.
Those jars of Barilla sauce are very useful. The crock pot is fond of them.
If you are using dried beans instead of canned, rinse them, put into new water in the crock pot before going to bed. Next morning, drain, and use. That is cheaper. Some people soak them and discard the water, and rinse. An hour soak is enough. But practices vary about that.
