I see a lot of suggestions for GF imitations of things like muffins or pancakes and such. Just want to make sure everyone is aware, GF IS NOT SYNONYMOUS WITH LOW CARB. If you're watching your carb intake, GF is not a get out of jail free card. Almond and coconut flours are good low carb alternatives but rice and potato flours are just as chock full of carbs as regular old wheat flour. If you want to go the GF route to make up for your carbs, be really careful and check the ingredients and carb content.

cheese and veggies
fleishigs (gasp!)- chicken, meat, veggies, etc.

you said no eggs as main. does this mean no eggs at all, or no eggs alone? you could easily make a veggie kugel with eggs, veggies of your choice, onions, salt. add cheese if you want.

you can make almond flour waffles, they freeze well.

lentil recipes? falafel, soup, dahl?

are you ok with milk? how about a simple smoothie? no added sugar, just milk and fruit (I assume you can have some carbs?).

coconut flour pancakes are good.

eggy crepes filled with cheese and broccoli. you can look up coconut or almond flour recipes for the crepes.

soup- veggie, chicken, tomato-zucchini-cheese, beef, lentil, bean, etc?

Chia pudding!
Easiest thing to make!
1 cup coconut milk to 4 or 5 tablespoons chia seeds. Mix And leave in the fridge overnight.
You can add Cocoa or sweeteners if you want. I just eat it plain with some frozen berries on top.
