tomato based soups or lentil/split pea soups are fast to prep because they need fewer vegetables chopped.

My Mom's No-Patchkeh Cabbage Soup:
Into a large pot, place:
One bag coleslaw mix
One 28-oz can of diced tomatoes
One can of water (washing out the tomato can, basically)
Salt & pepper, plus garlic powder to taste
Simmer until the cabbage is tender and the liquid is reduced to your liking, then add lemon juice and sugar to taste to get that sweet and sour flavour.
She also made the corn chowder that naturalmom posted. Boy, does that bring back memories!

I bake the butternut squash in the oven for half an hour on 350 let it cool off, then its easier to peel.
