My zuchinni soup is bitter :(

There must have been a bitter zuchinni. It has onions, zuchinni, salt, pepper, basil, and oregano in it. Is there any way to fix it or should I just dump it?

Hugs. I've thrown out zucchini soup a few times due to a bitter aftertaste. And I never make from only 1-2 zuchinis... aderaba, maybe others will give ideas how to fix this.

I hate to say it but I vote for Dump. I believe that your zucchini was bitter. It's not your fault and there was no way of knowing before it was cooked. Happens to the best of us.

I find it's only bitter when the zucchinis are old. Never had this problem with freshly bought zucchinis

You could try a very little bit of acid (lemon juice, Apple cider vinegar).
More salt? Something sweet? (Tomato? Has sweet and acidic components)

Ground coriander? (Has almost a citrus like flavor)

So interesting, my zucchini soup was also bitter this week...

Yeah, I had this last week too. First time it happened actually. It was a smallish pot of soup so I ate it anyway as I was too hungry. LOL I won't be making zucchini soup again so soon.

I hate when I get a bitter zucchini Sad
Salt is supposed to take away some of the bitterness.
Add a little bit of sugar at a time, tasting as you go. And if that doesn't help... Sad

Bought on Friday, made today. That doesn't mean it hasn't been sitting in the store awhile.

I'll try the lemon and then the sugar. It has enough salt.

I never make plain zucchini soup for this reason; I always mix it in with other veggies. Maybe you can add some other veggies like carrots, sweet potato, potato and/or broccoli to mask the taste.

Mine actually had some carrots in it too but it was still bitter.

If it's not going to be used for fleishigs, maybe adding butter or cream will mellow it a bit.
Has no idea zucchini could be bitter.

Zucchinis that didn't have enough water while growing can be really bitter. Pattypan squash too. I find that pattypan squash that isn't fresh can get pretty bitter.

Ok, this is weird.., my zucchini soup this week was bitter too.
I make this soup every few weeks for years and never had this. Curious if there could be a connection... Like maybe we all purchased in same place etc

Always do it with potatoes never bitter - also throw in a carrot or frozen Italian style vegetables and blend together heaven

I doubt you all bought your zucchini at the same place Tongue Out
But very possibly it was all grown in the same place and imported from there.

I always check old zucchni to make sure it's not bitter before cooking. If it is, peeling and removing seeds usually gets rid of the bitterness

As far as I know, there is no way to fix a dish made with bitter zucchini. After having had a few bad zucchini experiences, I now always slice off a small piece of each zucchini I cook with and taste it raw before using it. I've never had a bitter zucchini soup or side dish again, although I have had a few mouthfuls of bitter zucchini.
