I would like to make small quiche for supper, a veggie quiche and a mushroom.
Whats a good side dish to serve along with it?

IME, Quiche is a side dish. you should serve some protein with it, like salmon or tuna patties.

Soup before, small salad with. Or with sweet potato fries. Quiche is fine as a main - it has loads of eggs for protein.

Quiche is a protein and vegetable. It needs a carb. If you want your quiche to be a main, serve larger slices and smaller portions of pasta or whatever carb you choose. If a side, serve larger portions of your carb.

we usually go for a nice israeli salad ... with homemade english muffins & cream cheese
the carb is in the crust - unless you make it crustless
