You can sub with a cheaper nut butter or you can make your own almond butter.

Yes almond butter is quite expensive. You can make your own which is still pricey or mix in a seed butter or peanut butter, unless you have dietary or allergy restrictions.
I have mixed all kinds of seed/nut butters with excellent results. The only ones that work well by themselves are peanut or almond though.

I was able to get away with just those for years, but now my big boys (10 and 12) are rebelling, lol. In order to keep them on board, I've had to resort to buying some better junk online - organic jelly beans, marshmallows, etc. It's all dye free and HFCS free, but not "healthy" by any means. Oh well, I figure they're still better off than most kids out here who are snacking on Twizzlers and M&Ms.

I used to make jello but the unflavored/unsweetened gelatin is so expensive by me for such a small amount. Do you have a good source... online maybe?

My kids think cut up apples sprinkled with cinnamon is a treat.
For milchigs, you can combine plain yogurt, vanilla, orange juice, and maple syrup and freeze for creamsicles.

Other things...make caramel popcorn using maple syrup instead of corn syrup.

Roasted nuts with cinnamon and a sweetener of your choice.

Dark Chocolate Pudding (Natural Health Magazine)

2 c. + 1/3 c. soy milk (any type will work, I use half canned coconut milk and half water)
1 tsp. grated orange zest (I skip this)
1 oz 70% dark chocolate
1/2 c. cocoa
1/2 c. sugar (I use organic evaporated cane juice)
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 c. cornstarch
1 1/2 tsp. vanilla extract
1/2 tsp. almond extract

Combine 2 cups milk, orange zest, and chocolate in a saucepan over low heat.

Mix cocoa, sugar, cinnamon and salt in a small bowl. Add 1/3 cup water and stir to make a paste. Whisk into milk.

Dissolve cornstarch in remaining 1/3 c milk, stir into hot (not boiling) milk. Keep stirring to avoid lumps. Cook until thickened. Remove from heat, stir in extracts. Divide into 6 bowls and chill.

Yes, I buy my gelatin online from David Holzer (dh@fitgelatins.com).
There are many online recipes for making jello out of fruit juice. It's not difficult at all.

Shipping is quite expensive from that company... do you buy beef or fish? Which bloom?
The basic one they sell is 40$ a pound with shipping. Is that the one you get?
