Hi
Has anyone got a good recipe that I can use for challah? I need one by hand bc I dont have a machine. Every time I make it it comes very heavy.

I make Rebbetzin Kanievsky's challah (from the biography, not the BY cookbook). I proof the yeast, then mix all the ingredients but flour in my mixer with the flat blade (lightly). I pour the flour into a large stainless bowl (found one at Costco last year) and then pour in the liquid and knead by hand.
Once you get the hang of kneading by hand your challah should be wonderful.
I use Costco bread flour and they come out wonderfully fluffy.

OP, I know you were asking for a recipe but would you consider using a hand mixer with dough hooks? I personally used this model to knead challah until I started using a Bosch. I read a recommendation for it somewhere and it worked pretty well. I had to divide the dough into 2 parts & mixed each part separately.

It was not as easy to use as a Bosch but definitely easier than kneading by hand.

While I was replying, I found the link that led me to this mixer (scroll down to get to the Oster mixer):
