What should I use for the liquid when making pareve (vanilla) instant pudding? IME, soy milk does not work - the pudding doesn't thicken. Would water work? Would it taste decent? Any other ideas? Rice or almond milk are not so available here. I can make some coconut milk if that works better.

I've used non-dairy creamer and gotten a great pudding-like texture, and if you want it more "moussey" you can use parve whipped cream. I use that as a pie filling for an easy Shabbos dessert.

Thanks. In the end I decided to use non-instant chocolate pudding. I used plain water and twice as much powder as the recipe called for, plus I added some vanilla. It didn't really thicken so I added cornstarch. It tastes okay, but it's missing some of the fuller mouth feeling you would get from milk. It'll do for what I need it for, though.

If u use whip topping- did u just use it as liquid? What's creamer?
