Potatoes 101

As one who at times buys potatoes from Costco as well as buys from local supermarkets I am not quite sure of what is meant by "large potato" or "medium" potato in recipes. Is there a convention by weight as to potato size when referred to in recipes?

If a recipe calls for, say, 6 large potatoes, do they mean "Costco sized" potatoes, and if not then how many of the Costco monsters wold this translate to? For a recipe to work one needs accurate or somewhat accurate proportions. I wish at times one would simply say "3 pounds of potatoes".

BTW, my guess is, a potato that you see as very big is probably somewhere between 1.5 -2 potatoes as far as the recipe will go. And do be sure that they're good inside.

Most non-american recipes use weights, because it is more accurate. You can always google "Recipe for XYZ using weight" or something like that, and you'll probably find lots of options.

I don't know what size costco potatoes are, but I have definitely seen jumbo potatoes which are bigger than "large potatoes." In those instances, I count them as 2 medium or 2 large, or whatever seems closest. But in general, if a recipe is calling for potatoes by number, rather than by weight, it's clearly not a finicky recipe and will be fine with a little more or a little less.

Don't stress about it so much.

Large Russet / Idaho potatoes are roughly around just a bit more than half a pound each.
Large red potatoes are a between a third of a pound and half a pound.
Go from there.
