What can I make using frozen spinach?

Spinach kugel...

1/2 box elbow macaroni, cooked and drained
2 10 oz packages frozen spinach, cooked
3 eggs
1 1/2 packages onion soup mix
3/4 cup parve milk (I use soy milk)
1/4 cup margarine or oil
1 can of mushrooms (optional)

Mix everything, pour into a loaf pan and bake for 1 hour at 350 degrees F.

I never heard of spinach kugel with pasta. Make the same thing but omit the pasta and add some bread crumbs, matza mehl or flour if it seems to wet or runny. I don't bother cooking the spinach, just thaw it and squeeze it well to drain off the excess liquid. Save the liquid if you can and put it in soup--why send the vitamins down the drain?

Process spinach, mayo and garlic in blender. Season with salt to tastes. (Spinach needs a lot of salt.) Process again for a second to mix salt.

Saute onions and mushrooms add spinach and you can add either an egg ot bind or mashed potato and put in puff pastry doug fold ver brush with egg can sprinkle with sesame seeds and bake.

Spinach patties sorry not an exact recipe but defrost drain it than add eggs and bread crumb and matzah meal to hold together and fry them or bake them.

spinach pizza
• 2 Tbsp olive oil
• 1/2 large Spanish onion, chopped (1 cup)
• 2 cloves garlic, minced
• 1 lb. frozen spinach, thawed and squeezed dry
• 1/2 tsp oregano
• 1/2 tsp dried basil
• Kosher salt, to taste
• 8 oz. (2 cups) shredded cheese + 1 cup more for garnish
• pizza dough
• 2 fresh tomatoes, evenly sliced (optional)

Preheat oven at 400 degrees, or toaster oven to 350 degrees.
In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté until tender and translucent, about 5 minutes.
Add spinach and sauté until excess moisture evaporates.
Add oregano, basil, salt and 2 cups cheese. Mix well until melted. Remove from heat; set aside.
Roll out the pizza dough into desired shape.
Using a spatula or back of a spoon, spread the spinach cheese mixture in an even layer over the pizza dough.
Arrange the tomatoes over this layer if using. Sprinkle pizza with additional cup of cheese. Bake for 25 to 30 minutes.

I can't believe it! I've been searching for this recipe tonight- I saw it earlier this week when looking up something else and I was looking forward to making this except I'm out of onions! Do you think it would work without the onions? I'm using fresh spinach.

Use a bit more garlic and just make sure to taste and season the spinach well.
