I want to make a healthier pareve hamantaschen (SWEET not savory), does anyone know if its possible to use olive oil instead of canola oil/margarine? Will the dough come out yummy?

I use olive oil for everything. The key is to use a mild flavored olive oil.

The only caveat with olive oil in hamentaschen is that you have to add both al hanissim (Chanukah AND Purim) paragraphs to the bentching when you eat them at your seudah, so be sure to put a note to that effect in your MM.
