Barley?

So, continuing ways to use up excess chometz... what's good to do with barley other than cholent or soup? We're not into cholent and I only use a little bit in soups, which I anyway don't plan on making right now.

Barley salad. (I don't have the recipe on hand at the moment, but it includes peppers, and a delicious dressing with dijon mustard.)

Remind me, and I will post it after Shabbos if I can't before.

I make it as a replacement for brown rice. I use alton brown's recipe for baking it. http://www.foodnetwork.com/rec......html

you can make a barley apple onion kugel thing. My mother used to make it and it was very yummy but I don't know the exact recipe. My mother's gluten free now Wink

Did this! DH and one DD loved it, the other DD did not elect to try any, and I thought it was OK but a little too reminiscent of cholent. Still, it's supposed to be healthy and 2 people loved it so I may do it again and maybe try different seasonings next time.

My mother used to make this and I loved it. Cook barley according to directions. Saute chopped onions, then add chopped tomatoes and cook until desired. Take off flame and add sauerkraut and barley. Serve warm.
