Beets, can they be cooked and then frozen?

I just cooked a pot of beets. I will not have a chance to turn them into beet salad for a couple of days, so I'm wondering what would happen if I froze them and then defrosted them when I am ready to turn them into a beet salad...maybe on Sunday or chol hamoed? Help!

Keep them in the fridge (no liquid) in a sealed container until you're ready to make unto a salad.

I freeze them in small ziploc bags. When I want a salad I take one out defrost in and dress it. I freeze them cut.
