So usually I would make banana cake , but I dont have a pesach recipe for that.
Anyone have a good recipe, or any other healthier ideas of what to do with my bananas?
They just ripened way too fast, probably because of my kitchen being hot from all the cooking, and from the warm weather...
TIA

Banana Cake 8 svgs
3 large eggs
¼ c oil
½ c honey
3 bananas, mashed
2 c almond flour
(I imagine you could sub ground nuts, it would just be heavier)
¾ tsp baking soda
Preheat oven to 325.
Combine eggs, oil, honey, til well blended.
Add bananas, almond flour & baking soda, mix just until blended.
(Use less flour if it looks thick enough...)

Spread in 8 in square pan.
(NOTE: I am planning to try it w/o baking soda. Though there's no good reason we don't use baking soda... so maybe we'll just get some...)
Drizzle in chocolate or chips (below or bought if you use : ).
Bake about 40 minutes or until firm to touch, not brown.
When cool, cover well. Store airtight in fridge for a few days or freeze 2-3 months.

Healthy Chocolate
½ c coconut oil
5 TBS cocoa
8 TBS maple syrup or agave
vanilla
melt, pour into lined pan or ice cube trays (but keep it thin)
add nuts, dried fruit, coconut etc
or drop onto paper for chocolate chips.
Keep in freezer

Blend it with kiwis, pineapple and mango then freeze. Blend again and voila! You got yourself yummy tropical sorbet!

POB!
Pineapple orange banana juice.

Milkshakes, freeze them first, then blend with milk, vanilla and a little molasses. I add carob powder and sometimes ground nuts.
