the way pesach comes out this year - the last day is shabbos

so what do people do, are you allowed to make gebrocht things ahead for use on shabbos when it can be eaten ?

Yes it's allowed. I've done it before
For those who are chassidish, my SIL actually called R' Usher Ekstein and he said it's not a problem.

Abound, if your family will miss the matzah balls maybe make chicken "matzah" balls to them instead.

We were told it's no problem to make ahead even when the last day is not Shabbos.
We can't use the pots until next year though (once it's used for gebrokts).

In general it can be made before Pesach too which many people do, then just freeze it for the last day.

FYI you can technically make kitniyos chulent in advance too. Buy separate kitniyos pesach dishes, I know someone who does this. Also, last yr I saw ashkenazi kids munching on their bamba etc on Shabbos after Pesach ( I live in Israel)
For me, I unfortunately have no problem eating the food we had all week!
