Easiest ever: place whole potatoes on the bottom of the crockpot. I do with peels. Place chicken bottoms on top. Sprinkle with salt and pepper. Sometimes I add an inch of water. Let it cook for at least eight hours.

I put 2-3 cloves of chopped garlic, and a chopped onion, into crockpot. Add 1/2 cup barley and 1/2 cup brown rice. Place 4 pieces of chicken on top. Sprinkle generously with garlic powder, onion powder, and paprika. Add about 3 to 4 cups of water to the sides (so as not to wash off spices from chicken). Turn crockpot to high for about 2 hours, then low until supper time.

Some crockpots have an auto shift setting - high then low - which works well.

You could probably just do low for a long time, too.
