Someone asked for uncomplicated vegetarian meal ideas. Here are some of mine and maybe others can share theirs too.

We are not vegetarian either but I like variety and trying new foods. I get kind of sick of chicken if I eat it too often.

Years ago when I went vegetarian I looked at the food from cultures that ate low on the food chain or had limited meat consumption. Then a light bulb went off in my head and I recognized that during the Xtian season of Lent, meat is typically off the menu. So I googled Vegetarian recipes for Lent and picked up some of my tried and true veggie recipes. Yea, when looking for these recipes you will find some recipes with clams or crab, just ignore them and move on to the next.

There are some great vegetarian blogs out on the internet, do a google and see what they have going on that may appeal to you and your family.

When I eat vegetarian I don't necessarily want to make something that is a faux meat, although in families with picky eaters and kids it may be what works for you.

Easy majedra (rice and lentils)
3 c. Lentils
2 c. Brown rice
8 c. Water
3/4 Tblsp. Salt
2 Tblsp. Minced onion (dry or fresh)

Mix all and bake covered in a preheated 350 deg. Oven for about 2 hours. Comes out perfect every time and only one baking dish to wash. ( I also add a little oil, but that's optional). This makes a lot. Enjoy!

You can probably use other spices if you don't like curry. Sometimes I throw in whole cherry tomatoes or other veggies. Its also quick becuase the lentils cook while you chop the onions and look for the spices.
