I have some feta cheese in the fridge and I'm actually home from work today with the kids at school (!!!!!!)
Any ideas what I can eat it with for lunch? Don't have so many vegetables in the house now, so salad is out even though I love feta type salads..

its great in eggs, pasta, sandwiches. My favorite omlette to order out has feta, spinach and tomatoes.

I make a baked tilapia with cherry tomatoes and feta. so good!

There is a great recipe in the Original Moosewood Cookbook. Its smashed orange squash or sweet potatoes. You add feta crumbles, and jalapenos or chipotle chillies (if desired), top it with bread crumbs, a bit more feta and crushed nuts or sunflower seeds. I love it. My kids would eat it cold they enjoyed it so much.

I make chunky pasta (spirals, rigatoni, etc.) then mix the hot pasta with chopped fresh spinach so that the spinach wilts on contact, then stir in crumbled feta and sprinkle with pepper and dried basil/oregano.
Even just add a bit to mozzarella cheese when eating pasta with cheese to add flavor. It's how I feel grownup on nights where the kids chose pasta for dinner
Excellent to crumble into omlettes.

If you're feeling fancy, you can make spanikopita. If you're feeling lazy, throw it in a quiche and bake it. Either way, it's amazing. Feta is one of my favorite cheeses.

Yum. Love all these suggestions. It's also awesome as a fancier grilled cheese sandwich. With tomato and pesto if you're going super fancy but a good addition to any cheese sandwich.
