Looks delicious ra_mom! Do you think I can use white meat? I know the problem is that it can dry out but we're not such fans of the dark meat.

Yes but you would need to reduce temperature / length of cooking time.

I sliced onions on the bottom on the pan and then put in the roast and pour a mixture of duck sauce and onion soup mix on top of the roast. Cook covered for at least a hour and half and check I like it cooked more well done than less.
