We love this one - but I substitue chives for scallions and I use Osem vegetable soup mix instead of the bullion cubes
POTATO SOUP W/ CHIVES
1st set of ingredients
3 cups raw diced idaho potatoes
1/2 cup diced celery
1/2 cup diced onion
1 1/2 cups water
3 vegetable bullion cubes
1tsp. salt
1 cup milk
2nd set of ingredients
1 cup milk
8oz. sour cream
2 Tbsp. flour
1 Tbsp. chopped chives
Combine 1st set of ingredients in large saucepan. Cover & cook about 20 minutes. until tender...not mushy!
Mix 2nd set of ingredients in a bowl.
GRADUALLY add bowl to saucepan.
Stir constantly until thickens.
Combine in large saucepan.

Broccoli cream soup:
6 tablespoons butter
2/3 cup flour
In small sauce pan over low heat mix together and whisk till blended. Remove from heat.
2 tbl butter
1/4 cup chopped onion
4 cups broccoli (fresh, should boil first till semi soft.. or frozen
frozen)
6 cups chicken broth: can use pareve chick. Soup mix in water. Or season water.
3/4 cup half and half,(one carton of cream)
1tsp salt
1/4 tsp pepper
In large saucepan (I just use a soup pot) melt 2 tbl butter, add onion. cook till tender. Over med. Heat. Add broccoli. Cook and stir for abt 6 min. Add chick. Broth. Increase heat and bring to a boil.
Whisking constantly. Afd flour/butter mixture. Cook and whisk until soup thickens and bubbles.
Last add salt and pepper and half and half. Heat through and serve hot.
Soup will get thicker when standing, u can add some milk if want it a bit thinner.
U can sub with cauliflower. (I never tried it but sure it would b good)

Amazing Carrot soup with heavy cream / 12 servings
Ingredients:
12 large carrots, 2 medium potatoes, 2 onions, 1 oz butter, heavy cream, Nutmeg, Turmeric (not a must) a bit soup mix, White pepper, Salt
To serve:Croutons, Grated cheese
Preparation:
1. Cut all the vegetables into cubes , put oil + butter in hot pot just to cover with water and a little more .
2. boil, add spices, cook on lower medium heat for about 25 minutes or until all vegetables are soft .
3. blend well the soup, return to the pot add the cream and check the seasoning.

Salmon soup:
Potatos
Carrots
Onions
Mushrooms
Cut up and boil till soft. Then add cream, and or milk (depending on how milky,creamy u like it) wait till starts boiling again.
Then Place cut up salmon squares into it one at a time. Season with salt and pepper and dill (either spice or fresh, fresh tastes best).

I made a cold yummy strawberry soup with vanilla yogurt (you can make it parve with soy milk)
Strawberry soup:
2 bags frozen strawberries
2 ripe peaches peeled and chopped
3 cups pineapple juice (or orange juice if you don't have)
2 tsp vanilla
2/3 cup sugar
1 cup vanilla yogurt (or soy milk)
blend in blender (or with food processor or hand blender)
cold and refreshing! freezes well
