I think I finally have it figured out yay! Veg dishes will depend on what looks good and is priced well at the store this week.

I will serve my typical shabbos menu which is:

Fish, small salads and dip
Baked Chicken with a Veg
Dessert
Cholent
Green salad

Motzei Shabbos:

A chilled veg soup
Lachmagine
Salad

1st Day:

Breakfast:

Iced Coffee
Lemon Yogurt Cake and Oreo Truffles
Feta Salsa with Crackers

Lunch:

Soup
Slow cooked mexican salmon over creamed corn
Fleishig leftovers if anyone wants

Second Night:

Soup
Asian Steak Salad
Miso Tehina Noodle Salad

Second Day:

Iced Coffee
Lemon Yogurt Cake and Oreo Truffles
Feta Salsa with Crackers

Lunch is TBD based on leftovers and mood.

hosting Sunday lunch for 12 people- one vegan who is oil free,

trio of cold soups in shooter cups- corn coconut, green gazpacho, watermelon gazpacho
good bread with cashew basil caper spread

macaroni and cheese casserole (dairy)
zuchinni lasagna (vegan and oil free)
Caesar salad (dairy- will leave some plain lettuce for vegan guest and make a tehina dressing for him)
asparagaus with edamame and tarragon salad from love and lemons cookbook

iced coffee with almond milk
vegan apricot tofu cheesecake bites (no crust)
some sort of dairy cheesecake bite thing- maybe the oreo one on this site
fruit

Sunday night, might just do bread and a taco salad or chicken soup

For one bowl chicken noodle meatball soup I'll just be layering elements of chicken soup, pappardelle pasta or similar thick ribbon egg noodles, dark turkey meatballs, sliced carrots and some baby spinach leaves (will sauté them for just a touch before shabbos so I can put them in right before serving without "cooking" them on shabbos.

1 Cup raw unsalted cashews, soaked 3 to 4 hours, preferably overnight
½ Cup fresh water
Juice of ½ small lemon
½ teaspoon lemon zest
1 garlic clove, peeled
2 Tablespoons extra-virgin olive oil
2 teaspoons capers
½ cup fresh dill, coarsely chopped, reserve a few for garnish

Directions
Drain and rinse the cashews and place them in a high-speed blender. Add the water, lemon juice, lemon zest, garlic, and olive oil. Puree until smooth. Add the capers and the dill. Season with salt and pepper and blend until well combined. Taste and adjust the seasonings. Chill until ready to serve.
Slather onto warm baguette slices and garnish with fresh dill and quick pickled onions, if desired.

Recipe is from Love and Lemons- I will use basil instead of dill because my husband doesn't like dill

For the chicken noodle meatball soup I layer steaming hot chicken soup in large bowls with sliced carrots, add pappardelle wide ribbon noodles, lightly baked dark ground turkey meatballs, and baby spinach leaves lightly sauteed in garlic. One bowl meal Smile

Gefilte fish I cook it up the classic way.

Dips are tomato dip, spinach dip, babaganoush and horseradish for the gefilte.

Shepherd's pie
Process onion, carrot and garlic in food processor. Sauté in oil. Add ground beef and brown. Add some ketchup and season well while tasting.
Spoon into ramekins, leaving room for potatoes.
Peel and cube 3 potatoes. Cook for 20 minutes until soft. Drain. Add 2 tablespoons each oil and parve milk. Mash until smooth. Season with salt and pepper to taste. Add 1 raw egg and mash until creamy.
Pipe the potatoes over the meat.
Bake uncovered at 350 until tops are golden.
