I do have it, but some for reason I can't find it at the moment. One of the kids must have taken it. I'll post the recipe as soon as I find it, BN, unless someone else does first.

I love this recipe. Haven't made it in over a yr. Here you go...

1 red bell
1 yellow bell pepper
1 15 oz can baby corn
1 cup snow peas/sugar snap peas
1 carrot
10 green beans
1/2 red onion

1/4 c sugar
1/3 c. apple cider/balsamic vinegar
1/4 t. salt
1/8 t. pepper
1/8 c. olive oil
1/4 t. garlic powder

I don't remember exactly. Maybe 2-3 days? The vinegar and sugar serves as preservative.

Do you think I can make it in advance for second day of Yom Tov? (I.e. make it tomorow?) Or is that pushing it.

I think so. Between the vinegar and sugar you should be fine... I don't remember if the peppers soften too much by then but should be fine.

Oops, more questions:

Bought canned corn by mistake instead of baby corn. Can I use it, do you think?

Also. I realized I don't know directions. Do I need to steam, saute, etc. any of the ingredients? Or cut into particular sizes?

Skip the corn and keep all the vegetables raw. Good Yom Tov!
