"Secret" ingredients:

Sautéed onion (I actually sautee many pounds in advance and freeze flat in ziploc bags, then break off as necessary)

Real maple syrup or sugar (funny story about this: I used to sift out most of the sugar /maple flavoring from pareve instant oatmeal to use for my cholent. I foolishly kept the baggies in the same box as the oatmeal packets. One Friday morning I accidentally grabbed an open apple cinnamon one...)

Tomato paste

Coriander

Chili powder

Sometimes cumin

Smoked paprika

Sometimes sautéed mushrooms (if doing pareve)

Barbecue sauce (currently jack Daniels)

Regular stuff :

salt (each item /layer as it goes in)
black pepper
Garlic powder
Paprika (sweet or hot, in addition to speed)
Marrow bones
Potatoes (red and russet)
barley
Sometimes canned beans rinsed well
Meat, whatever was on sale. I paint the meat with the barbecue sauce
If pareve cholent then drizzle top with olive oil.
Water to cover

Best is if it can stay in low temp oven double wrapped to prevent burning, otherwise low crockpot.

Best crockpot trick: some water in bottom of crock, line with parchment, more water, crockpot bag. Minimal effort cleanup.

Lamb is my secret ingredient too! But the only herbs and spices I use are black pepper and bay leaf.
