I love to make a cold lentil salad, delicious in summer! Basically it's lentils, tuna, tomatoes, boiled egg, pickles with a mustard sauce, yummy! It's full of protein and very filling!

Vegetarian Chili with Cornbread


Chili ingredients:
2 onions, chopped
8 cloves garlic, minced
2 red peppers, chopped
1 tsp red pepper flakes (I use less)
2 tsp cumin
2 tsp ground coriander
2 tsp ground cardamom
1 Tblsp cocoa
1 1/2 cups brown lentils
3 cups diced tomatoes (canned is fine)
1/4 cup tomato paste
1/4 cup ketchup
3 cups water

Sautee the onions, peppers and garlic until soft. Add all other ingredients and simmer covered for 45 minutes.

Cornbread ingredients:
2 cups cornmeal
2 Tblsp flour
1 Tblsp baking powder
2 tsp salt
1 tsp cinnamon
4 eggs
2 tsp honey
1/4 cup oil
1 1/4 cup buttermilk/yogurt/milk with lemon juice
1 package shredded cheese

Mix the dry ingredients first and then add the wet ingredients and mix well. Place chili in lasagna size pan and top with cornbread mixture. Bake at 375 for approximately 25 minutes.

Serve with sour cream and slices of avocado.



That's the original recipe. My family found the cornbread to be too dry. Now I make the chili in a pot and make another recipe of cornbread separately. We're still experimenting to find the right one, but there are lots of recipes out there!

I used to make lentils & rice (with fried onions & topped with yogurt).

Then I found a recipe for burgers that I could use for the leftovers. So it also had brown rice in it.

Unfortunately I lost the recipe and it was so good DH asked why we were eating it on milchig dishes!

It had sunflower seeds and I think celery. Probably wheat germ.

I guess I can try ra_mom's recipe but I sure wish I had that oldie but goodie!
