I bought drumsticks and I would like to make southern fried chicken, but baked. Anyone have a recipe?

Take off the skin. Dip in egg, then in cornflake crumbs seasoned with salt, pepper, garlic powder. Bake at 350 45 min covered, 45 min uncovered. (That's what I do for my chicken quarters, but drumsticks probably need less cooking time.)

I put corn meal, paprika, black pepper, garlic, salt, a little oil, in a bag. Shake it well, and set aside.
Take the chicken with the skin on. Dredge it in flour or in cornstarch if making gluten free.
Take 3 eggs and whip them up in a bowl. Dredge the floured chicken in the egg and then put it in the cornmeal bag. Shake it in the bag until it is thoroughly coated. Put it in a very well greased pan, and put little dollops of shortening on each piece. Bake at 350 for 90 minutes.
It didn't say it was healthy.

The 3 step dredging process is really important. I am all for taking shortcuts where it doesn't make a difference but this really makes a difference. This would really be like calling quick grits southern style grits. They just aren't. No self-respecting Southerner (and yes, I am a Southerner) would admit to eating quick grits. We did used to buy them, but we fed them to our chickens. We would never actually eat them.
