I use Rebbetzin Kanievsky's challah dough recipe for white and it's amazing! I use a mixer and just throw in a 1-kilo bag of flour (sifted) and all the other ingredients, and it mixes up perfectly! I try doing the same with whole wheat and it just doesn't work. It needs much less than the kilo sometimes, and the texture just comes out off. Anyone have a recipe where you put a full 1 kilo of ww flour?

With 70-80% it works. I have used 1kg of each. Get a kitchen scale and adjust the ratio. Adding more water and oil will improve it.
Anyway, there's a difference in the dough due to humidity so the water needs to be adjusted.
