That seems like a lot to change in this recipe. I would just use a different mousse that fits with your requirements. You can still use the other parts of this recipe that do work for you (the base, berries, curls etc.)
Btw, I for any mousse I would suggest using the kind of chocolate bars you would eat rather than baking chocolate. Much better flavor.
