I wouldn't- the cookies may spread and turn into a mess.

I would use earth balance, but if I had no other choice , I would try using half the amount of oil called for.

You can use palm oil shortening or coconut oil.

Thanks for the replies. I was hoping everyone would say yes...I'm making them with a lot of kids tomorrow and have only canola oil...I usually substitute but wasn't sure if sprinkle cookies were different.
oh well 🤔

I make this sugar cookie recipe without margarine all the time. It does grow so it isn't great for icing.

Sugar Cookie dough

Mix together with mixer or knead by hand:

3 eggs
1 cup sugar
3/4 cup oil
2 1/2 tsp vanilla
2 1/2 tsp baking powder
2 Tbsp Orange Juice
4 cups flour. (add more if too sticky, I normally end up using about 4 1/2 cups. When done the dough should be very workable)

Roll and cut with cookie cutters.

Drop Sugar Cookies

3 eggs
1 C sugar
3/4 C oil
2 tsp baking powder
3 C flour
1 packet vanilla sugar (I just use extract)

Preheat oven to 350. Beat eggs and sugar well, and add remaining ingredients. Form cookies with spoon on parchment lined paper. Sprinkle with colored sprinkles or coarse sugar. Bake 8-10 minutes.

I ALWAYS use oil! it works the same. just im sry I cant give u alternate measurements, I put it in last so I can see the consistancy that it makes in the other ingrediants. if it makes it stick together nicely to make a cookie, not too dry and not too moist, then thats about just right

Thank you all for the recipes! I used fast forward's. We made around 8 double batches throughout the day. They were delicious! The sprinkles didn't stick to the dough very well, but they had fun pushing the dough into the sprinkles.
Thanks!
