why would someone use this? Is it faster than a regular kettle? Why not an electric urn? Can it be used on shabbos? Is it always plugged in?

It is always plugged in. It cannot be used on shabbos.
Advantages over stovetop kettle: faster, turns off automatically, doesn't create heat.

Smaller than an urn and uses fresh water (unlike the urn that has the same water sitting in it all day). Also, it is always plugged in, but not always on.

they are beneficial because they are quick to boil ... however they cannot be used for shabbos
my mother likes this one because it has a warm button ... also has different temps
