I hear and read that eating the combination of rice and beans, such as mujadara and other versions, forms a complete protein. I'm trying to understand exactly what that means, especially in regards to nutrition and weight loss.
Is it like getting the nutrients of a protein IN ADDITION to the components of carbohydrates that the rice and beans provide, or do those carb components "disappear" when eaten together and forming a protein?
Practically speaking, if I am trying to eat a low carb, high protein diet, is a combination of rice and beans something I should include in my diet or not?
I hope my question is clear.

Legumes plus starch carbohydrates make a complete protein when eaten together.
Eating them together does not negate the fact that you are eating carbs.
While a healthy form a eating, this combination is not the right choice for a low carb, high protein diet.

Yes. If you're using clean rice and beans.
Note that if your intention is high protein, low calorie, you'll only be able to eat a little of the rice and bean dish, but you'll be able to eat much more of a grilled chicken breast dish with a side of rice.

Trying to eat foods in their most natural state, no refined or enriched products, no preservatives, and buying prepared items with as few ingredients as possible.
