Will the defrosted carrot muffins(frozen for a week and defosted on Friday)
be soggy when served for Shabbos lunch? If yes, what can I do to prevent this?

I leave them in the freezer until Shabbos morning and then pull them out like an hour or two before the meal.

Warm them up uncovered on the blech or crockpot.
