I open up the Artscroll machzor to the simanim and make something based on each of them.
Carrot kugel
Beet green burekas
Coleslaw
Challah with dates- not raisins
Sweet potato pie or pumpkin pair using gourds instead.
Honey cake
Pomegranate seeds in the salad

Use your own creativity.

I have found bottled sauces for chicken with pomegranate, I plan to use that for my main at night. I love doing small plate appetizers for the simanim. www.JoyOfKosher.com has lots of great recipes.

I made a fabulous leek-beet salad last year that I am definitely making again this year.

For day meals I like things that can reheat well since it's iffy when we get home from shul.
Meatballs and rice area favorite. Salads that can be prepped in advance and just dressed before the meal. Frozen vegetables- empty into foil pan and leave on the hot plate or in the oven and they will defrost nicely.

Roast in a lot of sauce/gravy is also good for lunch.

I make dishes based on the simanim including the fish and a soup.

Last year I made a ribsteak for each of the night meals and DH and I split it. It was really big.

Lunch I like simple dishes that dont dry out when we are at shul, saucy meatballs, chicken, meat lasagna. I tend to make more the more interesting patchkedig things for sukkos.
