I usually just do spices and bake. I am boring. Sometimes I will put a sauce on like BBQ or Pesto or honey mustard.

broil the salmon with garlic [extra points if you have soy or terriyaki] it has enough of it's own oils to bind and be tasty
take sliced tomatoes and onions & add fresh garlic & spices for fresh not salad
bake the 2 sweet potatoes till nice and soft and eat right along with skin

Crush garlic with salt, spread it over salmon, sprinkle with parsley flakes for color, and bake at 400 for 18 minutes.
Cut up sweet potato in French fry shapes, season with garlic powder, cumin, salt and bake at 400 for 40 minutes. (If you don't have oil, cooking spray or margarine, rinse the sweet potato pieces to make them wet before tossing with the seasoning.)
Cut up peppers and tomatoes and serve alongside the other two dishes.

Glad everything worked out for you.
When in doubt (or between paychecks) I make what I call "What's in the fridge?" soup. A handful of grains, a bunch of veggies, and a dash of random spices. If I have meat, I'll cook it as a side, or throw it in the soup. It's kind of like "hobo soup", you just use whatever you have, and cook it until the flavors blend. It's never the same, it never fails, and DH loves it.
