Question
Can I use hard boil eggs to make it
My MIL says when the Mayo doesn't emulsify correctly you can use a hard boil egg to save it.
The truth is I got a parve icecream recipe that calls for a mayo base and then rich whip.
I'm going to use coconut oil for the mayo
I'm going to be replacing the rich whip with coconut cream whipped cream
To make it healthier.
Yes I know this is very very fatty. That's not my question.
My question is can I used cooked eggs to make the mayo base.

Mayonnaise does not work with hard boiled eggs. If your concern is using raw eggs, you can buy a food thermometer and pasteurize your eggs. Google it.

Boiled eggs? No, not at all.
Raw eggs. It's not a problem.

They sell pasteurized eggs which can be used raw.
Alternatively, there are recipes for vegan mayo which don't use eggs but I've never tried one.
