With a EXACT instructions
Preferably one that I can shape and freeze

I freeze my regular challah dough recipe, after braiding, I think it works for most recipes.
The one I use is from one of Susie fishbein's old cookbooks. Instructions specifically say that it can be frozen at that point.
If I have time later I'll post it.

Add extra yeast to your regular recipe. Freezing reduces the effectiveness of the yeast hence the extra yeast.
