Can I sear and bake this roast and then freeze?

No problem. Just remember cooked and uncooked animal protein freezes well. It's other things like starches and plant proteins that have problems. The freezing changes the cell structure so a pasta can become mushy or a potato grainy and falling apart. Sauces with sugar freeze well, add eggs or a fat to them and they will decline in texture and may break or separate.
