Can I sautee them with onions? They have a little unique smell.

Shitake. They taste like they smell, that won't change. Can Saute with onions, has a Chinese food taste. Stems are very tough, don't use them.

Mine have a cracked top. Is it a variation of a Shitake mushroom?

No, fruit/veg store. Why?

They have the toughest texture, theyre almost impossible to chew. Ive never tasted mushrooms like these.

Shiitake mushrooms have a very rubbery texture, even when cooked well. Soak them in hot water for a half an hour or so, and then cut them into very thin ribbons or diced small. After that, you can add them to soups or stir fry them. In vegetarian meals, they make a great replacement for meat, and in soup they have a slightly "meaty" taste.

I thought only mine were rubbery. People like rubbery mushrooms?
