What's a good fabric to choose for dining room chairs that is easy to clean, I.e. stain proof?
I have an opportunity to get my chairs done before yomtov, but I need to decide today!

if you want stain-proof, you can use some kind of pleather. if you don't want that, use any upholstery fabric and use a waterproofing spray on it.

I have off-white vinyl with a pattern. It looks beautiful and wipes clean. It looks way better than fabric covered with plastic.
There is a huge selection available.
