It freezes fine.
I would not leave the peels on the apple. It might be a personal thing but I hate apple peels on cakes/pies/pastries that contain apple.

My recipe is almost exactly the same. You don't need a mixer and it freezes beautifully.

I also peel the apples and dice them (not slice or grate).

Thanks for replying. Its supposed to be a dough. Right? Or a cream batter?

It's a very thick batter.

Also, for anyone who's interested, I've made it in two small Bundt pans and it comes out just fine. My family doesn't love apple cake so we never eat a whole big one before it gets stale.

Just made it and it was delicious. I went a little less on the sugar too, I also grated the apples, it makes a difference !
