A guest coming to our home is allergic to carrots so I cant out in in my chicken soup. Should I just leave it out> how will it taste? Or is there a substitute I can out in to replace the carrots??

Sweet potato? Don't know if it'll be the same, but it is very good in soup.

Put in a bunch of other vegetables, such as celery, onions, garlic, parsley roots, parsnips, zucchini, and sweet potatoes. Other vegetables you may want to use include turnips and kohlrabi.

You can use other vegetables and herbs to give it flavor.
onion, zucchini, sweet potato, parsnip, potato, parsley, dill, lots of chicken, any other root vegetables, lots of salt, etc.
alternatively, you can go with a different soup like butternut squash.

Find out if she is allergic to any other veg. Hopefully she is not allergic to onions.
Sweet potato is a nice sub for carrot.
I think zucchini would work as a sub for celery.
They both add a nice flavor to chicken soup, though I admit I add them with the celery, onion and carrots.

Use extra parsnip for that sweetness. And don't forget extra sweet potato, zucchini, fresh dill and garlic.

My mil makes her soup with just chicken bones, squash and tons of onions. Her soup is yummy

I make my soup with every vegetable I can find; sweet potato, carrot, parsnip, turnip, kohlrabi, celery, onion, zuchinni, pumpkin or butternut squash.
If I can't find something one week I just omit it and it always tastes fine. If this guest can have most other vegetables, you should be able to leave out carrot and celery and include other vegetables. I also always use fresh dill and parsley.
IMO the secret to great flavor is cooking at least 6-8 hours. With chicken and bones, it should taste great.

I am also allergic to carrots and I don't put it in. I do Putin every vegetable I can get my hands on. I love love love my chicken soup. I put in lots of fresh dill too. And leave in the soup. It's heaven. Yummmm. Root vegetables are very good and cooking for till. The color is golden and everything is real soft. Also put in chicken and turkey. Either necks or drumsticks turkey. Oh my I love it. It's my favorite.
