Do you taste it when raw? Or hope for the best? I've never come across an exact salt to potato ratio and anyway it's probably more of a preference thing. So, any tips?

You can lick it raw and you should feel the salt level and try to remember how much you put in and see how the results are and atleast know for next time

I taste it raw but before I add the eggs.
I start with 1 tsp salt but usually have to add quite a bit more, depending on the type of potatoes.

Trial and error. Make a note of how much you used and adjust accordingly the next time (salt levels taste different when raw vs. cooked). I can tell you I use nearly a tablespoon, that it's not too salty, but I can't tell you how many potatoes that's for because I do it by look. But I perfected my recipe years ago via the above-mentioned trial-and-error method.

I use exactly two flat teaspoons of salt for 5 pounds of potatoes and 6 eggs. It comes out perfect.

I think a lot of it has to do with how much you like. I have a recipe with 8 potatoes that calls for 1 Tablespoon of salt, but I use 1.5 tsps. More is too much for us.

My recipe says 3.5 tsp for 5 lbs. with 8 eggs and 3/4 c. oil
I taste and spit out and sometimes add.

I follow a recipe.
1 kg potatoes
half cup oil
3 eggs
half Tbsp salt.
quarter tsp pepper
Yum!

Take a tablespoon of the mixture and fry it up in a small frying pan (like a teeny latke) and then take a taste.

I taste till I get to the right amount. I don't use spoons just the palm of my hand.

I have found this too, and so taste it raw and keep it slightly undersalted. The kugel loses moisture while baking, so I imagine this concentrates the salt level as compared to the salt concentration when raw.

The cooks rule of thumb is better to undersalt than oversalt - that said - you can taste it when it's raw.
