I dont have orange juice (soy or apple either)
Do you know of any substitutes that might work?

I made it with lemonade once. It tasted slightly lemony but still good. I once substituted mango juice for orange juice in a different recipe and it was also fine. Basically any fruit juice would work. Worse comes to worse it'll probably still be good with just water.

Yellow cake from kosher palette:
3 cups flour
2 cups sugar
1 Tablespoon Baking powder (yes not teaspoon)
1/2 tsp salt
1 cup oil
1 cup Orange juice (I use soy milk)
1 tsp vanilla extract
4 large eggs
Mix dry ingredients. Add the rest till well blended. 9x13 pan. bake 325 for 50 minutes or till done.

I have substituted apple juice (I diluted it with water so it shouldn't make the cake too sickly-sweet) and it tasted as yummy as usual.

the recipe calls for coarse salt but I dont have. how much regular salt do I substitute??

I use the same amount of regular salt as is calls for the coarse salt.

you dont need to use any juice or parve milk you can use water it wll taste just as good if you like the citrusy taste just add a little zest.

I just use water.
I usually add chocolate chips when I make it.

No offense. but that's not a compliment! Who wants a cake from scratch to taste like a box mix?
(unless its the duncan hines brownies-theyre the best!)

Duncan Hines tastes like it's been sitting in a box... oh, wait...
It has a distinct, yicky flavor.
