How much dry yeast= how much fresh yeast? Is there a special order to put the ingredients in so the salt doesnt touch the yeast but the sugar does? I remember hearing something to that effect

I put instant yeast, salt and sugar in the mixer together with no problems. If you are using yeast that needs to be proofed, it will be mixed with at least some of the sugar (or equivalent honey, etc) to bubble before you mix it into the rest of the ingredients, including salt.

My mother in law told me her secret . she puts in all wet ingredients first, plus sugar salt. Last in, is half flour on top yeast then other half flour
