Must be low carb, no fish, no salad. Not too much fuss to prepare. Will also take suggestions for dinners that make good next-day leftovers (I eat dinner leftovers fairly often and find it to be hit or miss).

Leftover chicken or meatballs can be a great lunch the next day.
I like to cook up a large pot of quinoa at the beginning of the week and add things each day, like diced veggies, pomegranate arils, and it becomes a very filling lunch.
You can also make mini frittatas or mini quiches in a muffin pan and take a couple for lunch.

Egg omlete are not much fuss.
Are you willing to fuss and freeze.
You can make crust less quiches and freeze
Turkey slices (deli) wrapped around celery or cucumber.
A little bit of a fuss Mortabella Mushroom pizza
Cauliflower can be made into wraps, but this takes time.
Stuffed pepper with egg salad. I prefer tuna, but you said no fish.
For dinner that makes great leftover
Grilled chicken breast
Burger wrapped in lettuce
If you want to be fancy use a large mushroom as a bun
I like chicken salad, take leftover chicken breast shred it up and add celery mayo and a little red onion if you can have (high carbs)
Rotisserie chicken from the store is great for this
You can make "faux roasted potatoes" with radishes and eat them with the legs.

Thanks. THe chicken salad sounds really good. I also like the fritata/quiche idea (though it would have to be no crust). My only concern is I usually eat eggs for breakfast, so eggs for lunch is not something I can do every day (though I wouldn't mind sometimes having eggs for 2 meals). Any other ideas? The more I can get, the better chance I have of success at a healthy, filling lunch.
