I want to make cupcakes for my daughters class (she is going to be the shabbos ima). Please any recipes would be helpful.

Something that doesn't contain whip cream or juice.

Use any cake recipe, I don't think there are specific cupcake recipes, are there? fill the cupcake holder 3/4 way full & voila!

Yes, a regular cake mixture, just pour into cupcake holders, and bake same temperature, but less time.

You can use a mix, too. It makes 12 reg sized cupcakes.

Lots of naches, btw. Hope the morah takes a picture!

Anyone have the KBD cookbook that can give me a recipe? And if not I will just use a regular cake mix.

Easy recipe (from MIL, don't know where she got it from)

1 cup water
1 cup oil
2 cups sugar
3 cups flour (if not self-raising, add also 3 tsp. salt & 3 tsp. baking powder)
4 eggs
1 tsp. vanilla

Bake at 350 for 20 minutes (for cupcakes; 45 for cake).

I just made these this morning for shaloch manos... thanks!!!! they're awesome and SO easy!! I love that I only have to wash out a cup and a teaspoon and not 50 measuring cups and spoons...

Does anyone know if there's a way to use this recipe for chocalate also? Like adding some cocoa??

Thanks and happy Purim to all!

I doubled this recipe... and also doubled the salt Confused they came out sooooo salty-- the whole batch went straight into the garbage. Sad

I like my sponge cake recipe, you can use it for cupcakes, but I dont know how much it will rise in the cupcake tins. in my big tin it rises double, usually.

I cut and paste from the one-bowl cake thread

I have a very easy delicious cake. I do it in one bowl with a hand blender (to make it lighter) but I dont separate the eggs, nor do I whisk it.

my cups are 180 ml
my packets are 10grams iirc.

you start with the eggs, all together in the bowl and then add one by one

6 eggs. when they are frothy and rise in volume;
1 and a half cups sugar when combined;
1 and a half cups oil when combined;
2 packets vanilla sugar when combined;
1 packet baking powder when combined;
2 cups flour. careful when mixing not to let the flour fly out of the bowl

optional, add a pinch of salt between the baking powder and flour.

bake for 20 minutes on 200 degrees celcius. without opening the oven in between. then check with toothpick in the center. take it out of the oven as soon as it comes out dry. DO NOT OVERBAKE.
it should rise to double the height ( I use a disposable baking tin that is 9x12 inches, and 3inches high (approx- I went to measure it now and I have used it a lot so it stretched a little, but I think that originally it was those measurements.)

when the cake has cooled, wrap it and freeze.

You only need 1 tsp of salt to make 3 cups of all purpose flour into self-raising.

there is a type of four called 'self raising flour'. if it doesn't say that on your flour, you should add the salt and baking powder t the recipe.

I don't think they have self raising flour in USA. It is basically plain flour with a raising agent in it already so no need to add it (baking powder).
