I am out of the house by 6:20 am every day and don't get home on Friday till 3. With shabbos being so early, how do I go about putting up a cholent? This would be my 1st time!!!!

Prepare your cholent in the crockpot Thursday night, sans water.
Friday morning, add the water, place the crock into the heating element, and set to low. Leave the cholent to cook until the shabbos noon meal.
If you prefer your cholent less well done, add the water to the crock when you get home from work and start the cooking process then.

I do this WITH the water and let everything soak. I'm nervous that the potatoes will brown and the meat will dry out if I don't put in liquid.
I turn it on low right before candlelighting and it's bH great.

If it is on low from Friday morning, will it cook fully? Does the chulent need to reach a boiling point at some point?

Yes, I have made cholent on Friday morning - cooks for about 24 hours on low the whole time. Doesn't need to boil in a crock pot.
