OR
Combine 1 part barbecue sauce and 2 parts duck sauce, pour over seasoned chicken and bake.

This is easy and delicious (and pesachdik too)
Pour a little oil in pot (we use a big deep frying pan)
Add duck sauce and heat it up
Coat cutlets in potato starch (flour works too. The original recipe was for pesach)
Fry in the duck sauce, flipping in middle, until done (usually a few minutes on each side)

Enough to cover the bottom of the pot with about 1/4 to 1/2 an inch of duck sauce.

Saute an onion, add bite size chicken cutlet pieces. Saute till chicken is cooked thru... spice with salt pepper garlic powder and onion powder. Add equal parts bbq sauce and duck sauce. Let the sauces cook down for a few minutes.
Serve over rice or couscous or in a pita.
OP - there are many other recipes for cutlets that will make the chicken moist besides duck sauce.
