I have a package of ground chicken breast and another package of ground chicken. So I know that the chicken breast is less fatty and therefore healthier, but I'm wondering if I can interchange these ingredients or if it won't work. (The ground chicken looks much thinner in texture/mushier)
For ex: I've made chicken-meatballs before from ground chicken breast, but I don't know if the ground chicken will be thick enough to hold.
Any recipe ideas?

At my butcher the ground chicken IS from chicken breast.
The ground bottoms are labeled ground dark chicken.
Maybe try adding some eggs or matzah meal to make it firmer.
