How do I bake latkes for my husband who is dieting? What temp would I set the oven on?

I baked latkes for the first time this year. Set it to 425 and baked 15 mins on one side then flipped them and baked another 15 minutes.

I would spray with a little olive oil so they brown nicely & are not soaked in oil

Regular recipe with no oil. Spray a muffin tin with olive oil and fill each one up with the batter. Bake in a very hot oven until nicely browned.
I did this last year when I was less than a week postpartum. They were delicious and easy.
